Straw yellow to the eye, crossed by more greenish reflections. Complex and elegant nose, where typical varietal notes alternate with floral hints of jasmine and more spicy sensations, in which touches of pink pepper and vanilla emerge. It enters the mouth with a broad and fresh sip, consistent, on a taste level, with the notes already perceived on the nose. It closes with a persistent finish.

To the eye it has a clear straw color, enriched by slightly more greenish notes. Fine and intense the nose, where notes of orange blossom alternate with more fruity and citrusy hints. It enters the mouth with a savory and fresh sip, decidedly long on the finish.

Intense ruby red, crossed by nuances that turn more towards violet. Blackberry, blueberry and raspberry jam are confirmed with intensity on the nose, where touches of vanilla and noble spices are then perceived. The palate is well structured, balanced, characterized by soft and velvety tannins. It closes with a finish of excellent persistence.

CARUSO & MININI

Metodo Classico Catarratto Brut € 40.00
Limited edition (between 6,000 and 12,000 bts) for a classic method of great finesse, a symbol of Caruso & Minini's ‘artisanal knowledge’. A pure Catarratto, Arya comes from a selection of vineyards particularly suited to the production of sparkling base grapes. After manual harvesting in the first ten days of August, it is fermented in temperature-controlled stainless steel, aged sur lie until frothing, and finally re-fermented in the bottle.
A bubbly with “silk” perlage, characterized by a pleasant aromatic bouquet based on citrus and fragrances of brioche bread. Creamy on the sip, beautifully structured and with a marked acidity on the finish.

Bibbo Zibibbo € 25.00
Shining in its own light is Caruso & Minini's “Bibbo,” characterized by a sweet and enveloping bouquet. Zibibbo is an aromatic grape variety deeply linked to Sicily; its natural beauty manifests itself from the moment of harvest, between August and September, carried out with scrupulous care. Cryomaceration of the destemmed grapes takes place in stainless steel winemakers at a controlled temperature of 4°C for 12-24 hours. This is followed by fermentation, aging for 3 months in stainless steel and then for 2 months in bottle. An intense and elegant white, an ally of aperitifs and vegetarian palates, for an unparalleled taste experience.

Straw-yellow in color tending to golden like the mustard flowers drawn on the label, Caruso & Minini's Catalù Catarratto expresses a bursting mix of fruit and flower scents on the nose that helps enhance its freshness and elegance.
Sea breezes blowing from the sea to the vines make it full, mineral, slightly savory. After a manual harvest during the first decade of September, the grapes are cryomacerated in stainless steel fermenters for full extraction of polyphenolic substances; the resulting product ages in steel, before bottling. An identity white, matchable with the whole meal, capable of encapsulating the essence of a winemaking history under the banner of love for the vineyard and the Salemi territory.
